I heard a phrase in Hill Country German years ago, althoughdn't I write down the German words. It translated as "like a chicken ladder," (the ramp which goes up into the henhouse) to describe some situations one finds oneself in.

Thanks for discussing what the various egg labels mean! This was insightful and encourages me to pay more attention to the eggs I buy. Off hand, how do you feed your chickens when you're away for a while, like on vacation?

Creaole Clouds EGGS VELVET

Milk, Sour Cream, real Mayonnaise

Tony Chachere's Original Creole Seasoning

Louisiana's Pure Crystal Hot Sauce

~ ~ ~ ~ ~

- Scramble Eggs: Dash of Whole Milk wet the bowl sides, add Dab/Gob of Sour Cream, real Mayonnaise.

- I fork the Sour Cream & Mayo into the Milk and add Eggs.

- For 12 eggs, I add up to a Table Spoon of Tony Chachere's Original Creole Seasoning, and 8 Shakes of Crystal Hot Sauce,

- After whipping the mixture, I add more seasonings to taste.

- Butter a large pan, bring to Medium High. Add Egg Slurry,

- Bring to Low Head. Cover. Wait till done.

- I guess you can stir, but I find that a bother.

- Inhale Soft Clouds of Tasty Egg.
